Karan Capcarrere

Food Safety Officer, Food Cloud

I have been delivering the EHAI Level 2 Primary Course in Food Safety for a number of years now. I find the course content very relevant for the learners at this level. The course is broken up into manageable modules with some great testing questions and quizzes for each one. I find the course easy to deliver and the learners enjoy the two days. The videos after each module reinforce the learning and create excellent talking points for the group.

Overall the learners I deliver to really enjoy the course and feel that they have a good knowledge of Food Safety by the end of it. I follow up the training with a visit to their premises as part of my role and it is always a pleasure to see the changes they have implemented following the training.

Ann Doyle

Training Participant, Tullow Day-care Centre

I found this course very informative, interesting and enjoyable. I learned a lot and found the course very beneficial.  I learned about the correct temperatures for cooking different foods.   The importance of all general food storage was discussed and the risk of cross-contamination.   Karen fully explained how to control food safety hazards and discussed hygiene in relation to food preparation and storage areas.  We also spoke about the importance of our own personal hygiene and correct food handling practices.  We also learned about legal requirements and food safety legislation, which I would not have known about before.

I thought the exam would be difficult, as it was my first exam in years, but I found that I was well able to answer the questions as I had a great understanding of the information after taking the course. Karen had also used a video with different examples which stuck in my mind.

We were all given a booklet during the course which we got to keep. I continue to use this and find it a good reference when I want to check something, like correct temperatures, etc.

Karen was an excellent trainer, explained everything very well and put everything into simple terms.  Karen made us all feel at ease. I would recommend this course to everyone

Marina Balfe

Tullow Day-care Centre Supervisor

Tullow Day Care Centre is a day-centre for elderly clients from Tullow and the surrounding areas.   We provide a 4-course lunch in the Centre every day and always have 2 or 3 choices of main course.  Many of our clients have various dietary needs, e.g. diabetes and coeliac disease.  We also deliver an additional 50 lunches daily to clients in their own homes.  Laundry service, baths, showers, hairdressing, chiropody and gentle exercises are some of the services we provide.

The feedback has been 100% positive in relation to all aspects of the training, i.e. content, format, delivery, training aids and examination.   The staff particularly commended Karen, for keeping the course interesting and for making it an enjoyable experience.

Operations Manager, Cheeverstown

Cheeverstown is a voluntary agency providing services to over 400 people. We operate both a campus based and community setting. This year we started to avail of EHAI Food Safety Training. We like this training because it is delivered in a relaxed atmosphere, it caters to all levels and it is comprehensive, it makes  you look behind the processes of catering and gives practical ‘dos’ and ‘don’ts’.   As a very “mature” student that the exam was naturally a bit daunting but obviously the course was good enough to get me through it – even with a distinction. We have plans to roll out the training to key elements of our housekeeping and care crew.

Ashby Food Safety Ltd.

  1. “I have been a licenced trainer with the EHAI for the last 15 years and have had the pleasure of teaching the Primary Food Safety Programme to over 2,500 learners. The course is well designed and easy to teach. It provides the right amount of information to ensure people hoping to work with food or those working in industry appreciate their legal responsibilities to handle and serve safe food. The exam can be daunting for some learners but achieving a certificate makes it all worthwhile. I would highly recommend this – and the new refresher programme – to any person wanting to get an understanding of food safety and encourage other trainers to deliver the programme” Lorraine Oman, Ashby Food Safety Ltd.
