What is HACCP all about and why is it important for Food Business operators?  As we know having a HACCP (Hazard Analysis Critical Control Points) plan in place is legally required for food business operators.  HACCP can be a difficult concept to get your head around.  You may be operating your business to a high standard and have a partial Food Management system in place but may not be documenting it properly. Or you may have daily checklists in place and believe that this is sufficient.  The Food Safety Authority of Ireland can provide a ‘safe catering pack’ for independent food businesses. This is a generic folder and can be completed by individual businesses and when it’s used properly it is a means of complying with the legislation. There is also great advice and information provided by the Environmental Health Officers Association of Ireland (EHAI).  Their food safety training courses provide relevant training on all aspects of food safety including HACCP.
