The author, Cathal Kearney, a Principal Environmental Health Officer employed by the Western Health Board, worked in the area of food safety for over twenty years and brought a wealth of knowledge and practical experience to the subject. The book was recently updated and edited by Siobhan Lawlor, who herself brings more than fifteen years of experience in the area of food safety to bear on this excellent publication.
